Gulai Jengkol with Mackerel is a delightful Indonesian dish combining jengkol (a type of bean) and ikan kembung (mackerel) with rich, aromatic spices and coconut milk. This dish is perfect for those who enjoy traditional flavors with a touch of culinary adventure. Here’s a detailed recipe for you to try:

Ingredients:

  • 250 grams jengkol (Indonesian beans)
  • 150 grams ikan kembung (mackerel)
  • 1000 cc coconut milk (medium thickness)
  • Oil for frying (as needed)
  • A small piece of ginger (seruas jahe)
  • 1/2 teaspoon salt (and a pinch of seasoning)
  • 3 bay leaves (daun salam)
  • 1 stalk lemongrass (serai)
  • 1 tamarind fruit (asam kandis)

Spice Paste:

  • 6 red curly chilies (cabe merah keriting)
  • 1 clove garlic (bawang putih)
  • 3 shallots (bawang merah)
  • 3 candlenuts (kemiri)
  • A small piece of ginger (seruas jahe)
  • A small piece of turmeric (kunyit)

Instructions:

  1. Prepare the Jengkol:

    • Heat oil in a pan and fry the jengkol until cooked. Once done, remove the jengkol from the oil and immerse them in cold water. Use a pestle to gently crush and peel off the skin. Set aside.
  2. Cook the Mackerel:

    • In the same pan, fry the mackerel until cooked through, or you can fry them until they are partially done if preferred. Set aside.
  3. Make the Spice Paste:

    • Blend the red chilies, garlic, shallots, candlenuts, ginger, and turmeric into a smooth paste. Set aside.
  4. Prepare the Gulai:

    • In a large pot, pour in the coconut milk and add all the ingredients except for the jengkol and mackerel: bay leaves, lemongrass, tamarind fruit, and the spice paste. Stir and bring to a boil.
  5. Simmer the Dish:

    • Once the coconut milk mixture comes to a boil, add the jengkol and mackerel. Cook until the flavors are well absorbed and the dish reaches your desired consistency. Adjust seasoning with salt and a pinch of seasoning if needed.
  6. Serve:

    • Taste and adjust the seasoning as necessary. Serve hot and enjoy the rich flavors of this traditional Indonesian dish.

Notes:

  • The dish’s gravy might not be very visible in the pot, as I prefer it to be thick and flavorful. You can adjust the consistency by adding more coconut milk if desired.
