Instructions:

  1. Preheat Oven: Begin by preheating your oven to 450°F (232°C).

  2. Prepare Peppers: In a 1-quart saucepan over low heat, add a drizzle of olive oil. Cook the garlic clove until browned, then discard it. Cut each green pepper lengthwise in half, removing the seeds and stems. Brush the pepper halves on all sides with the oil mixture.

  3. Roast Peppers: Arrange the pepper halves in a large open roasting pan. Roast them for 25-30 minutes, or until the skin puckers and the peppers are tender, turning occasionally. Allow the peppers to cool slightly, then remove and discard the skin.

  4. Prepare Eggplant: While the peppers are roasting, slice the eggplants crosswise into 1/2-inch thick slices. In a pie plate, mix the egg and milk. Place breadcrumbs on waxed paper. Brush a 15½ x 10½ jelly roll pan with 3 tablespoons of olive oil. Dip the eggplant slices in the egg mixture, then coat them with breadcrumbs.

  5. Broil Eggplant: Place the eggplant slices in the prepared pan, arranging them in a single layer. Preheat the broiler. Position the rack about 7-9 inches from the heat source with the oven control set at 450°F. Broil the eggplant for about 10-15 minutes, until tender and lightly browned on both sides, turning the slices once.

  6. Assemble Casserole: Reduce the oven temperature to 350°F (177°C). Slice the mozzarella cheese. Arrange the roasted pepper halves, broiled eggplant slices, and mozzarella cheese in a 12 x 8 casserole or baking dish.

  7. Bake: Cover the casserole and bake for 20-25 minutes, or until the mixture is hot and the cheese melts.

  8. Serve: Sprinkle the dish with sun-dried tomato slices before serving.
