Salmon Tartare with Avocado Cream and Toasted Almonds

Instructions:

  1. Prepare the Salmon: Begin by handling the salmon. If using Norwegian salmon, there’s no need for prior treatment. However, if you are unsure about the freshness of the salmon, it’s recommended to freeze the fillet for at least 96 hours at -18°C before consuming it raw, in accordance with health safety standards. Remove any bones from the fillet, then cut it into small cubes and place it in a bowl. Season the salmon with a pinch of salt, black pepper, and the zest of one lime. Grate the fresh ginger, collect the juice by pressing it between two spoons, and add it to the salmon mix. Stir in the rice vinegar and finely chopped chives. Cover the bowl with plastic wrap and let the mixture rest in the fridge for 30 minutes.

  2. Make the Avocado Cream: While the salmon is marinating, prepare the avocado cream. Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon into a bowl. Mash the avocado, then add the lime juice and a pinch of salt. Stir until smooth and creamy.

  3. Toast the Almonds: In a dry pan, toast the sliced almonds over medium heat. Keep an eye on them to ensure they don’t burn. Once golden brown and fragrant, remove from the heat and set aside.

  4. Assemble the Tartare: To assemble the dish, use a round mold (about 7.5 cm in diameter) to create the layers. Place the mold on a plate and spoon a layer of avocado cream at the bottom. Add a layer of the marinated salmon mixture on top, pressing it down gently. Remove the mold carefully to reveal the tartare’s neat shape.

  5. Garnish and Serve: Sprinkle the toasted almonds over the tartare and add a few chive stalks for decoration. For an extra burst of flavor, add some halved cherry tomatoes around the tartare.
