Sardine-Flavored Battered Chicken (Ayam Tepung Bumbu Sarden)
Ingredients:
- 1/2 kg chicken breast, cleaned and cut into desired pieces
- 1 stalk green onion, sliced
- 1 egg
- 5 tablespoons chicken batter flour (any brand)
- Remaining liquid from canned sardines (tomato-flavored works well)
- 3 cloves garlic, thinly sliced
- 3-4 bird’s eye chilies, sliced (adjust to taste)
- Salt and seasoning to taste
- A splash of water
- 4 tablespoons cooking oil for sautéing

Prepare the Chicken: Begin by placing the cleaned chicken pieces into a mixing bowl. Add the egg, sliced green onions, and chicken batter flour. Mix thoroughly until all the chicken pieces are evenly coated with the batter.

Cook the Chicken: Heat 4 tablespoons of cooking oil in a skillet over medium heat. Add the battered chicken pieces to the hot oil, cooking them until they turn golden brown and crispy. Once cooked, remove the chicken from the skillet and let it drain on paper towels to remove excess oil.

Sauté the Garlic: In the same skillet, add a little more oil if necessary, and sauté the thinly sliced garlic until it becomes fragrant.

Combine Ingredients: Once the garlic is aromatic, return the cooked chicken to the skillet. Stir gently to mix the garlic with the chicken. Pour in the remaining sardine liquid and add a splash of water if needed to reach your desired consistency. Stir well to combine.

Add Chilies and Seasoning: Incorporate the sliced bird’s eye chilies, and season with salt and seasoning to taste. Continue to cook for a few more minutes, stirring occasionally, until the flavors meld together and the sauce slightly thickens.
