Prepare the Vegetables: Start by peeling the carrot, garlic, and onion. Then finely chop them along with the celery stalk. Place the chopped mixture into a large pan, previously heated with 4-5 tablespoons of extra virgin olive oil.

Sauté the Base: Allow the mixture to soften over low heat for about 15 minutes. Stir occasionally, ensuring that it doesn’t take on any color.

Cook the Sausage: Add the crumbled sausage to the pan, followed by the chopped parsley. Stir continuously to avoid the formation of clumps. Let it cook on low heat for at least 5 minutes, making sure the sausage cooks through.

Prepare the Polenta: In the meantime, bring 1 liter of water to a boil and add a pinch of salt. Gradually pour in the cornmeal, stirring constantly to avoid lumps. Cook the polenta until it becomes thick and pulls away from the sides of the pot, then remove from heat.
