Fagottini with Lentils, Sausage, and Cheese

Prepare the Sausage Filling:
Start by preparing the sausage. Remove the casing and cut the sausage into chunks. Place them in a pan with a drizzle of extra virgin olive oil. Sauté the sausage on high heat for a few minutes until it’s well-browned and crispy. While cooking, use a wooden spoon to break the sausage into smaller pieces. -
Cook the Lentils:
Once the sausage has changed color and texture, add the pre-cooked lentils to the pan. Stir everything together and add a few sprigs of fresh thyme, a pinch of black pepper, and salt to taste (if necessary). Allow the mixture to cook for just a few more minutes. Then, remove from heat. -
Add the Brie:
Remove the rind from the Brie cheese and chop it into small pieces. Add it to the pan with the sausage and lentils. Mix everything together and let it cool slightly. -
Prepare the Puff Pastry:
Roll out the puff pastry on a flat surface. Using an 8 cm square cookie cutter, cut out 12 squares. -
Assemble the Fagottini:
Place a spoonful of the sausage and lentil mixture in the center of each square of pastry. Fold the corners of the pastry over the filling to create a small bundle (fagottino), making sure to press the edges together to seal. -
