Stir-Fried Beef with Pakcoy in Oyster Sauce
Ingredients:
- 250 grams thinly sliced beef
- 2 large green chilies
- 2 large red chilies
- 8 green bird’s eye chilies
- 5 shallots
- 4 cloves garlic
- 5 leaves pakcoy
- ½ small onion
- 2 tablespoons oyster sauce
- 2 tablespoons sweet soy sauce
- 1 tablespoon sambal sauce
- 1 tablespoon granulated sugar
- 1 tablespoon ground red chili
- 2 tablespoons coconut milk (such as Kara brand)
- Salt and ground black pepper, to taste
- Water, as needed
- 4 tablespoons cooking oil

Prepare the Ingredients: Thinly slice the shallots, garlic, and chilies. Wash and slice the pakcoy leaves.

Sauté Aromatics: Heat the cooking oil in a large skillet or wok over medium heat. Add the sliced shallots, garlic, and all types of chilies. Sauté until the mixture becomes fragrant and the shallots turn translucent.

Add Sauces and Seasonings: Stir in the coconut milk, sambal sauce, sweet soy sauce, oyster sauce, granulated sugar, and ground red chili. Mix well until the sugar dissolves and the sauces are well combined.

Cook the Beef: Add the sliced beef to the skillet. Pour in enough water to cover the beef partially, about half a cup. Stir to combine everything.

Add Pakcoy: Once the beef starts to cook, add the sliced pakcoy. Continue to cook until the sauce thickens slightly and the beef becomes tender. Adjust seasoning with salt and ground black pepper to taste.

Serve: Once the sauce has reduced to your desired consistency and the beef is tender, remove from heat. Serve the stir-fried beef with pakcoy hot, accompanied by steamed white rice.
