Tumis Kolor Ijo (Sautéed Cabbage with Green Chilies and Eggs)

Ingredients:

  • 1 head of cabbage (thinly sliced)
  • 3 eggs
  • 2 shallots
  • 15 cloves of garlic
  • 1 green chili (add more if you prefer extra spiciness)
  • 1 tomato (optional, to taste)
  • Salt, to taste
  • Royco seasoning (or any seasoning of your choice)

Instructions:

  1. Prepare the Ingredients:

    • Thinly slice the cabbage and set it aside.
    • Finely chop the shallots and garlic.
    • Slice the green chili diagonally and dice the tomato if using.
  2. Sauté Aromatics:

    • Heat vegetable oil in a skillet over medium heat.
    • Add the chopped shallots, garlic, and green chili to the hot oil. Sauté until fragrant and the shallots turn golden brown.
  3. Cook the Eggs:

    • Crack the eggs into the skillet and scramble gently. Cook until the eggs are just set, being careful not to overcook them. They should remain slightly soft.
  4. Add Vegetables:

    • Stir in the sliced cabbage, salt, Royco seasoning, and diced tomato (if using). Cook until the cabbage is tender and well combined with the eggs and seasonings.
  5. Serve:

    • Once everything is cooked through, remove from heat and transfer to a serving dish.
  6. Enjoy:

    • Serve warm and enjoy this flavorful and spicy dish.

Tips:

  • Adjust the number of green chilies to control the heat level.
