Tumis Kolor Ijo (Sautéed Cabbage with Green Chilies and Eggs)
Ingredients:
- 1 head of cabbage (thinly sliced)
- 3 eggs
- 2 shallots
- 15 cloves of garlic
- 1 green chili (add more if you prefer extra spiciness)
- 1 tomato (optional, to taste)
- Salt, to taste
- Royco seasoning (or any seasoning of your choice)
Instructions:

Prepare the Ingredients:
- Thinly slice the cabbage and set it aside.
- Finely chop the shallots and garlic.
- Slice the green chili diagonally and dice the tomato if using.

Sauté Aromatics:
- Heat vegetable oil in a skillet over medium heat.
- Add the chopped shallots, garlic, and green chili to the hot oil. Sauté until fragrant and the shallots turn golden brown.

Cook the Eggs:
- Crack the eggs into the skillet and scramble gently. Cook until the eggs are just set, being careful not to overcook them. They should remain slightly soft.

Add Vegetables:
- Stir in the sliced cabbage, salt, Royco seasoning, and diced tomato (if using). Cook until the cabbage is tender and well combined with the eggs and seasonings.

- Once everything is cooked through, remove from heat and transfer to a serving dish.
