Stir-Fried Beans with Tofu

Ingredients:

  • 3 shallots
  • 2 cloves garlic
  • 1 cm galangal
  • 2 bay leaves
  • 2 tablespoons cooking oil
  • 3 pieces of firm tofu, diced
  • 250 grams young green beans, sliced

Instructions:

  1. Heat the cooking oil in a pan over medium heat. Add the finely chopped shallots and garlic, and sauté until they become aromatic.
  2. Add the sliced galangal and bay leaves to the pan. Stir well to combine and release their flavors.
  3. Introduce the sliced green beans and diced tofu to the pan. Stir everything together and add a small amount of water to help the cooking process.
  4. Season with sugar and salt according to your taste. Continue to stir and cook until the green beans are tender.
  5. Once cooked, remove from heat and serve hot. Enjoy this flavorful dish as a delightful accompaniment or a satisfying main course.
