Tahu Kemangi Ungkep

Ingredients:

  • 10 pieces of raw white tofu
  • 2 cloves of garlic
  • 3 shallots
  • 3 bird’s eye chilies
  • 1 egg
  • 1 tomato
  • 1 bunch of basil leaves (kemangi)
  • Seasoning mix (Masako)
  • Salt to taste
  • Shrimp paste (terasi)

Instructions:

  1. Prepare the Aromatics:

    • Finely chop the garlic, shallots, and bird’s eye chilies. Set aside.
  2. Prepare the Tofu:

    • Gently crush the raw tofu with your hands or a fork until it’s in small crumbles.
  3. Combine Ingredients:

    • In a mixing bowl, combine the chopped garlic, shallots, chilies, and crushed tofu. Mix well.
    • Beat the egg and add it to the tofu mixture. Stir to incorporate.
  4. Season and Cook:

    • Add the seasoning mix (Masako), salt, and a small amount of shrimp paste to the tofu mixture. Adjust seasoning to taste.
    • Dice the tomato and add it to the mixture.
  5. Add the Basil:

    • Gently fold in the basil leaves.
  6. Simmer:

    • Heat a skillet over medium heat. Add the tofu mixture to the skillet and cook, stirring occasionally, until the water has evaporated and the mixture is well-cooked.
  7. Serve:

    • Once the mixture is fully cooked and the water has evaporated, transfer to a serving dish and enjoy!
