Beef and Broccoli with Oyster Sauce

Ingredients:

  • 1 head of broccoli (approx. 1/4 kg)
  • 1 carrot, sliced
  • 1 packet of shimeji mushrooms
  • 2 sheets of beef yoshi (thinly sliced frozen beef)
  • Salt and pepper to taste
  • 2 tablespoons sweet soy sauce
  • 2 tablespoons oyster sauce
  • 3 tablespoons cornstarch slurry (made by mixing cornstarch with water)

Instructions:

  1. Prepare the Broccoli:

    • Wash and cut the broccoli into bite-sized florets. Soak them in salted water for 15 minutes, then rinse thoroughly and drain well.
  2. Cook the Vegetables and Beef:

    • Heat a pan over medium heat and add a little oil. Sauté minced garlic until fragrant.
    • Add the sliced carrot and broccoli stems first, as they take longer to cook. Stir-fry for a few minutes until they start to soften.
    • Add the thinly sliced beef yoshi to the pan and cook until the meat changes color.
  3. Combine Ingredients:

    • Once the beef is cooked, add the broccoli florets and stir to mix. Pour in a little water to help create a sauce.
    • Add the shimeji mushrooms and continue to stir.
  4. Season and Thicken:

    • Season the dish with salt, pepper, oyster sauce, sweet soy sauce, and a splash of sesame oil. Taste and adjust the seasoning if needed.
    • Pour in the cornstarch slurry and stir well to thicken the sauce. Allow the mixture to simmer briefly until the sauce reaches your desired consistency.
  5. Final Touches:

    • Taste one last time and adjust seasoning if necessary. Once the sauce has thickened and everything is well combined, remove from heat.
  6. Serve:

    • Transfer the beef and broccoli stir-fry to a serving dish. Enjoy it hot with steamed rice or as a side to your favorite Asian-inspired meal.

Note: Use salt sparingly as oyster sauce is usually quite salty.
