Kari TaDaPi (Tahu Daging Sapi)
Ingredients:

- 3 pieces of tofu, diced and fried
- 400 grams of beef (you can also use a mix of beef with beef fat, liver, and heart)
- 1 box of instant coconut milk
- 3 bay leaves
- For the curry spice blend:
- 10 shallots
- 5 garlic cloves
- 2 candlenuts
- 2 teaspoons ground coriander
- 1/2 teaspoon white cumin
- 2 stalks lemongrass, white part only
- 1 segment of galangal
- 1 segment of ginger
- 6 large red chilies
- 1/2 teaspoon turmeric powder
- 1 teaspoon chili powder (adjust based on your chili stock)
Instructions:

Prepare the Ingredients:
- Begin by heating a pot of water until it reaches a rolling boil.

Sauté the Spice Blend:
- While waiting for the water to boil, blend the shallots, garlic, candlenuts, ground coriander, white cumin, lemongrass, galangal, ginger, red chilies, turmeric powder, and chili powder into a smooth paste.
- In a separate pan, heat some oil and sauté the spice paste until it becomes fragrant and the oil starts to separate from the paste.

Cook the Beef:
- Add the beef (and any additional cuts like fat, liver, and heart if using) to the boiling water. Let it cook until the meat is tender.

Combine and Simmer:
- Once the meat is tender, incorporate the sautéed spice paste and bay leaves into the pot. Stir well.
- Add the fried tofu to the pot and mix gently.

Add Coconut Milk:
- Pour in the instant coconut milk that has been diluted with a bit of water. Stir continuously to ensure that the coconut milk does not curdle.

Adjust Seasoning:
- Taste and adjust the seasoning as needed. Continue to simmer until all the flavors meld together and the dish is heated through.

- Serve the Kari TaDaPi hot, alongside steaming white rice for a satisfying lunch.
