Peel and dice the potatoes, chop the onions, slice the mushrooms, and finely chop the celery. Set aside.
- In a shallow dish, spread out the flour. Season with salt and pepper. Dredge the beef stew meat in the flour mixture, shaking off any excess.
-
Brown the Beef:
- In a large soup pot, heat a drizzle of olive oil over medium-high heat. Working in batches, add the dredged beef to the pot and brown on all sides. Remove the browned beef from the pot and set aside.
-
Saute the Vegetables:
- In the same pot, add a bit more olive oil if needed. Add the chopped onions and celery. Saute until softened, about 5 minutes. Then add the sliced mushrooms and continue to cook for another 3 minutes.
-
Combine Ingredients:
- Return the browned beef to the pot with the sauteed vegetables. Pour in the beef broth and water. Add the oregano, basil, thyme, parsley, and bay leaf. Stir to combine everything.
-
Simmer the Stew:
- Bring the mixture to a boil, then reduce the heat to low. Let the stew simmer, partially covered, for about 45 minutes to allow the flavors to meld together.
-
Add Barley and Potatoes:
- After 45 minutes, add the barley and diced potatoes to the pot. Stir well to combine. Continue to simmer the stew for another 45 minutes, or until the barley and potatoes are tender.
-
Incorporate Peas:
- Once the barley and potatoes are tender, add the peas to the stew. Cook for an additional 5-10 minutes, until the peas are heated through.
-
Thicken the Stew:
- In a small bowl, mix the cornstarch with water to create a slurry. Slowly pour the slurry into the stew, stirring constantly. Allow the stew to simmer for a few more minutes until thickened to your desired consistency.
-
Serve and Enjoy:
- Once the stew has thickened, remove the bay leaf and discard. Ladle the beef barley stew into bowls and serve hot. Enjoy this hearty and nutritious meal with your loved ones!
