Savory Beef Rib Soup with Aromatic Spices and Vegetables

Beef Rib Soup (Sup Iga Sapi)

Ingredients:

  • 1/2 kg beef ribs
  • 5 cloves
  • 1 cinnamon stick
  • Nutmeg (optional, skip if unavailable)
  • 2 potatoes, peeled and diced
  • 3 carrots, peeled and diced
  • Black pepper, to taste
  • Salt, to taste
  • Water, as needed
  • 2 green onions, chopped
  • 2 stalks celery, chopped

For the Spice Paste:

  • 4 shallots
  • 3 cloves garlic
  • Ground coriander
  • Salt, to taste

Instructions:

  1. Prepare the Beef Ribs: Begin by boiling the beef ribs in a pot of water to remove excess fat. Once the fat has been removed, discard the water and refill the pot with fresh water. Bring it to a boil again.

  2. Simmer the Ribs: Continue to simmer the beef ribs for approximately 60 minutes. Add the cloves and cinnamon stick to the pot to infuse the soup with aromatic flavors.

  3. Prepare the Spice Paste: While the beef ribs are cooking, prepare the spice paste. In a blender or food processor, combine the shallots, garlic, ground coriander, and salt. Blend until smooth.

  4. Cook the Spice Paste: In a separate pan, heat a small amount of oil and sauté the spice paste until fragrant. Set it aside once cooked.

  5. Prepare the Vegetables: In a separate pot, cook the diced potatoes and carrots until tender. This step helps to prevent the soup from having a raw vegetable odor.

  6. Combine Ingredients: When the beef ribs are tender, add the sautéed spice paste, chopped green onions, chopped celery, and the cooked vegetables into the pot with the ribs. Stir to combine all the ingredients.

  7. Final Touches: Continue to simmer the soup until all ingredients are well combined and flavors meld together. Adjust seasoning with black pepper and salt to taste.

  8. Serve: Once everything is cooked through, remove the beef ribs from the pot and serve the soup hot. Enjoy the rich, flavorful broth with tender vegetables and succulent beef ribs.
