Savory Beef Rib Soup with Tender Vegetables

Beef Rib Soup (Sop Iga Sapi)

Ingredients:

  • 1 kg beef ribs
  • 4 potatoes, peeled and cut into chunks
  • 2 carrots, peeled and cut into chunks
  • 2 stalks green onions, sliced
  • 2 tomatoes, cut into wedges

For the Spice Paste:

  • 7 cloves garlic

For the Spice Mix:

  • 1/3 nutmeg
  • 2 cloves
  • 1 thumb-sized piece ginger, smashed
  • Salt to taste
  • A pinch of MSG (optional)
  • 1 teaspoon granulated sugar
  • Ground black pepper to taste
  • 2 stalks green onions, tied with 3 stalks celery
  • 2 liters water (or more as needed for broth)

Instructions:

  1. Prepare the Beef Ribs:

    • Thoroughly clean the beef ribs and place them in a pot. Add enough water to cover the ribs and bring to a boil. Once boiling, reduce the heat and simmer until the meat is tender and easily pulls away from the bones. Remove the ribs from the pot and set aside to drain.
  2. Prepare the Spice Paste and Ingredients:

    • In a pan, sauté the garlic until fragrant and golden. Set aside.
  3. Cook the Soup:

    • In a large pot, add 2 liters of water and bring it to a boil. Add the sautéed garlic, followed by the beef ribs, nutmeg, cloves, and ginger. Stir to combine.
    • Once the broth starts to boil, add the potatoes and carrots. Cook until the vegetables are just tender, then add the sliced green onions and the tied bundle of green onions and celery.
  4. Season the Soup:

    • Add salt, ground black pepper, MSG (if using), and granulated sugar to taste. Stir well to incorporate the seasonings. Finally, add the tomato wedges.
  5. Final Touches:

    • Taste the soup and adjust the seasoning if necessary. Once everything is well-seasoned and the vegetables are cooked to your preference, turn off the heat.
  6. Serve:

    • Ladle the hot beef rib soup into bowls and serve immediately. Enjoy the rich, savory flavors of this comforting dish!
