Beef Ribs Soup with Meatballs Recipe

Ingredients:

  • 4 pieces of beef ribs
  • 2 stalks celery
  • 2 stalks green onions
  • 10 cloves garlic
  • 5 shallots
  • Cinnamon sticks to taste
  • 3 kaffir lime leaves
  • 4 bay leaves
  • 2 limes (for juice)
  • Salt to taste
  • Flavor enhancer (optional)
  • 2 lemongrass stalks
  • Water, as needed
  • Ground black pepper to taste
  • Fried shallots for garnish
  • Rice noodles or yellow noodles (for serving)

Instructions:

  1. Prepare the Beef Ribs:

    • Rinse the beef ribs thoroughly. Place them in a pot and cover with enough water to submerge them. Bring to a boil and let it cook until the meat is tender, which might take some time. Once the beef ribs are nearly tender, add the meatballs and let it simmer for about 30 minutes.
  2. Prepare the Aromatics:

    • While the beef ribs are cooking, finely chop the garlic and shallots. Heat a bit of oil in a pan, then sauté the garlic and shallots until they are fragrant and golden brown.
    • Add the bay leaves, kaffir lime leaves, bruised lemongrass, and cinnamon sticks to the pan. Stir for about 5 minutes to allow the flavors to meld.
  3. Season the Soup:

    • Incorporate the sautéed mixture into the pot with the beef ribs. Add ground black pepper to taste. Tie the celery and green onions into bundles with kitchen twine and add them to the pot. Stir well.
  4. Flavor and Adjust:

    • Add a flavor enhancer if desired, and season with salt. Squeeze the juice of the limes into the pot and taste for seasoning. If the liquid level decreases, add more water as needed. Continue cooking until the beef is very tender.
  5. Final Touches:

    • Slice the remaining celery into small pieces and add them to the soup just before serving. Turn off the heat and let the soup sit for a few minutes.
  6. Prepare the Noodles:

    • For the noodles, use either rice noodles or yellow noodles. Instead of boiling, pour hot water over the noodles and let them soak until tender. This method prevents the noodles from becoming mushy.
  7. Serve:

    • To serve, place a portion of noodles in each bowl. Ladle the hot beef rib soup over the noodles. Garnish with homemade fried shallots for added texture and flavor.
