Savory Beef Ribs Soup Recipe

Ingredients:

  • 500 grams beef ribs
  • 200 grams carrots
  • 200 grams potatoes
  • 5 cloves garlic
  • 2 cm ginger
  • 1 tablespoon whole black peppercorns
  • 2 stalks lemongrass
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 2 cm galangal
  • 2 tablespoons fried shallots
  • Salt to taste
  • Sugar to taste
  • 2 beef bouillon cubes
  • 2 tablespoons cooking oil
  • Chopped green onions and fresh celery for garnish
  • Lime wedges and soy sauce for serving

Instructions:

  1. Prepare the Beef Ribs:

    • Clean the beef ribs and cut them into small pieces. Blanch the ribs briefly in boiling water, then discard the first batch of water. Add 6 cups of fresh water to the pot and simmer for about 30 minutes, or until the meat becomes tender.
  2. Prepare the Vegetables:

    • While the beef is cooking, clean and cut the vegetables. Slice the carrots diagonally and dice the potatoes. Cook the vegetables in boiling water until they are just tender but not mushy. Drain and set aside.
  3. Prepare the Aromatics:

    • In a separate pan, heat the cooking oil and sauté the finely ground garlic, ginger, and black peppercorns. Add the bruised lemongrass, galangal, bay leaves, and kaffir lime leaves. Sauté until the mixture becomes fragrant.
  4. Combine and Simmer:

    • Once the beef ribs are tender, add the sautéed aromatics to the pot. Incorporate the cooked carrots and potatoes. Season with salt, sugar, and beef bouillon cubes. Adjust the seasoning to taste. Allow the soup to simmer for a few more minutes until all flavors meld together.
  5. Finish and Serve:

    • Just before serving, stir in the chopped green onions and celery. Garnish with fried shallots. Serve the soup hot with lime wedges and soy sauce on the side, allowing guests to add these according to their taste.
