Oseng Kikil Sapi with Baby Corn

Ingredients

  • 1/4 kg beef tendon (kikil sapi)
  • 200 grams baby corn
  • 5 red curly chilies (Cabe merah keriting)
  • Spices:
    • 5 shallots
    • 3 cloves garlic
    • 10 bird’s eye chilies (Cabe rawit)
    • 1 thumb-sized piece of ginger, crushed
    • 1 thumb-sized piece of galangal, crushed
    • 1 stalk lemongrass, crushed
  • Sweet soy sauce (to taste)
  • Granulated sugar (to taste)
  • Salt (to taste)
  • Water (as needed)

Instructions

  1. Prepare the Beef Tendon:

    • Wash the beef tendon with hot water, then rinse with cold water until thoroughly clean. Cut into bite-sized pieces as desired (I prefer small cubes).
  2. Prepare the Baby Corn:

    • Clean the baby corn and slice as desired (I prefer thin, round slices).
  3. Prepare the Red Chilies:

    • Slice the red curly chilies diagonally.
  4. Blend the Spices:

    • Blend the shallots, garlic, and bird’s eye chilies into a fine paste.
  5. Sauté the Spice Paste:

    • Heat a bit of oil in a pan and sauté the blended spice paste until fragrant. Add the sliced red chilies, crushed ginger, galangal, and lemongrass.
  6. Cook the Beef Tendon and Baby Corn:

    • Add the beef tendon and baby corn to the pan. Pour in enough water to cover the ingredients.
  7. Season the Dish:

    • Add sweet soy sauce, granulated sugar, and salt to taste.
  8. Simmer:

    • Cook the mixture until the beef tendon is tender and the water has reduced. Ensure to check the seasoning and adjust if necessary.
