Meat Pie (Tourtiere) Recipe

Description:
Raised in Quebec, Tourtiere was a big Christmas favorite. This recipe is a fusion of flavors from my Aunt and my second Mum’s recipes. Usually made from memory, due to numerous requests, I’ve decided to share it. Enjoy this savory pie packed with Canadian warmth and flavor!
Ingredients:
- 1 lb lean ground beef
- 1 onion
- 1 celery stalk
- 1 potato
- 4 garlic cloves
- 6 whole cloves
- 1 tsp allspice
- 1 tsp sage
- Pepper, to taste
Instructions:

Prepare the Meat Mixture:
- In a large pot, brown the ground beef. Drain any excess fat.
- Add chopped onion, celery, diced potato, minced garlic cloves, whole cloves, allspice, sage, and pepper. Mix well.

Simmer:
- Add bouillon to the mixture. Bring to a boil, then reduce heat and simmer for 3-4 hours. Alternatively, this recipe works well in a slow cooker.

Mash and Drain:
- Once cooked, use a potato masher to mash the meat/potato mixture to your desired consistency.
- Drain off any excess liquid and remove any visible cloves.

Assemble the Pie:
- Preheat your oven to 425Β°F (220Β°C).
- Fill the bottom pie shell with the meat mixture.
- Cover with the top crust, seal the edges, and score the top to allow steam to escape.

Bake:
- Place the pie in the preheated oven.
- Bake for approximately 45 minutes or until the crust is golden brown.
