Instructions

Step 1: Prepare and Marinate the Chicken

  1. Clean and Marinate: Rinse and pat dry the boneless chicken pieces. Place in a mixing bowl.
  2. Season: Add black pepper powder, a pinch of salt, 1 teaspoon of garlic, and 1 teaspoon of ginger. Mix well, ensuring the chicken is evenly coated.
  3. Marinate: Set aside to marinate for at least 30 minutes to allow the flavors to meld.

Step 2: Cook the Noodles

  1. Boil Water: In a medium saucepan, bring 2 cups of water to a boil, adding a pinch of salt and a few drops of oil.
  2. Cook Noodles: Add the egg noodles and cook for about 2-3 minutes, or until they are al dente. Take care not to overcook the noodles.
  3. Drain and Cool: Drain the noodles using a colander and rinse them under cold running water to stop the cooking process. Once fully drained, transfer to a bowl, lightly coat with oil to prevent sticking, and set aside.

Step 3: Stir-Fry the Chicken

  1. Heat Oil: In a wok or large skillet, heat 1 tablespoon of sesame oil over medium-high heat.
  2. Cook Chicken: Add the marinated chicken pieces and stir-fry until the chicken is fully cooked and golden brown on the outside. Remove the cooked chicken from the wok and set aside.

Step 4: Sauté the Aromatics and Vegetables

  1. Sauté Garlic: Add another tablespoon of sesame oil to the wok. Add the remaining garlic and sauté for about 10 seconds, until fragrant.
  2. Add Spring Onions: Add the white parts of the spring onions and sauté for an additional 30 seconds.
  3. Prepare Vegetables: Cut the carrots, cabbage, bell peppers, and bok choy into thin 3-inch strips.
  4. Toss Vegetables: Add the sliced carrots, cabbage, bell peppers, and bok choy to the wok. Stir-fry for 1-2 minutes until the vegetables are just tender-crisp.

Step 5: Add the Sauces and Seasonings

  1. Combine Sauces: Add the soy sauce, fish sauce, oyster sauce, red chili sauce, and rice wine vinegar to the wok.
  2. Mix Well: Stir thoroughly, ensuring the vegetables are evenly coated with the sauce.

Step 6: Finalize the Dish

  1. Add Noodles and Chicken: Return the cooked chicken to the wok along with the noodles. Toss gently to combine all ingredients.
  2. Season: Adjust salt and pepper to taste, and toss until everything is well mixed and heated through.

Step 7: Garnish and Serve

  1. Garnish: Sprinkle with chopped green parts of spring onions for a fresh flavor.
  2. Serve Hot: Serve the Cantonese-Style Chicken Chow Mein hot for best results, alongside a side dish like Chicken Manchurian and a dessert of Chinese Darsaan with Ice Cream for a delightful Chinese-inspired meal.
