Agnes’ Chicken Meatball (Bakso Ayam ala Agnes)
Ingredients:
- 1/2 kg chicken breast
- 3 tbsp cornstarch (not heaping)
- 4 cloves garlic, fried and mashed
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground pepper
- 1/2 tbsp granulated sugar
- 1 tsp chicken broth powder
- 1/2 tbsp salt
- 120 ml cold water
For the Broth:
- Spring onions and celery (left whole)
- 1 tsp ground pepper
- 1 tsp chicken broth powder
- 4 cloves garlic
- A pinch of nutmeg
- 1/2 tbsp salt
- 1 tsp granulated sugar
- Leftover chicken breast bones from making meatballs
Accompaniments:
- Thinly sliced celery
- Fried shallots (store-bought)
- Corn noodles (leftover from making nuggets)
Steps:

Separate chicken meat from bones. Finely chop chicken until smooth, adding cold water gradually but not excessively.

In another bowl, combine all prepared seasonings and cornstarch. Dissolve with the remaining cold water.

Mix together the finely chopped chicken and the seasoning mixture. Knead until smooth and elastic.

Slam the dough against the bowl to enhance elasticity. Transfer to a small container, cover with plastic wrap, and freeze for about 40 minutes.

Remove dough from freezer and prepare a pot for boiling meatballs. Use enough water to fill half the pot, add 1 tbsp salt to maintain meatball flavor. Wait for water to boil.

Don’t forget to add 1 tbsp cooking oil to the dough and grease hands with cooking oil to prevent sticking.

When water boils, reduce heat (better yet, turn off heat first), then shape the dough into round balls as desired. Wait until all float; if they do, they’re cooked.

Now prepare the broth. Don’t discard the boiled meatball water; use it for the broth. Briefly sauté mashed garlic and nutmeg. Then add to boiling water from the boiled meatball.

Add salt and granulated sugar. Then add whole spring onions and celery, 1 tsp chicken broth powder, and finally add the bones. Wait until boiling.

Arrange the meatballs in a bowl, add noodles, celery, fried shallots, and you can add whatever suits your taste. Since I’ve got it so at the time of making, it would be 😂 Oh, yes, if I boil it, I’ll give it a little salt.
