Topping Ayam Mie Ayam Recipe
Ingredients:
- 200 grams chicken breast, diced
- 8 chicken feet with bones (you can include all bones from the chicken breast)
- For the Spice Paste:
- 4 shallots
- 3 cloves garlic
- 1 1/2 candlenuts
- 1 cm turmeric
- 1 teaspoon toasted coriander
- 1/2 teaspoon black pepper (or to taste)
- Additional Ingredients:
- 1/2 tablespoon sesame oil
- 1 1/2 tablespoons oyster sauce
- Sweet soy sauce, to taste
- Salt, to taste
- Seasoning powder, to taste
- 1 stalk green onion, sliced
- 400 ml water
Instructions:
-
Prepare the Spice Paste: Begin by blending the shallots, garlic, candlenuts, turmeric, toasted coriander, and black pepper into a smooth paste. You can use a food processor or mortar and pestle for this.
-
Cook the Chicken Feet: Heat a pan over medium heat and add a small amount of oil. Sauté the spice paste until it becomes aromatic and slightly golden. Add the diced chicken breast and chicken feet. Stir well until the chicken pieces turn opaque.
-
Add Liquid and Seasonings: Pour in the 400 ml of water. Allow the mixture to simmer until the water reduces slightly and the flavors meld together.
-
Incorporate Additional Ingredients: Add sesame oil, oyster sauce, sweet soy sauce, salt, and seasoning powder to taste. Stir well to combine. Let it cook until the sauce thickens and the chicken feet are tender.
-
Final Touches: Add the sliced green onion and mix well. Adjust the seasoning according to your preference.
-
Serve: Remove from heat and let it cool slightly before serving. This topping is perfect over mie ayam (chicken noodle soup) or as a flavorful addition to other dishes.
