Chicken Meatballs with Broccoli and Carrots

Ingredients:

  • 2 medium carrots
  • 1 small head of broccoli
  • 100 grams chicken meatballs
  • Red chili peppers, to taste
  • 1 onion
  • 2-3 garlic cloves
  • 1 teaspoon cornstarch or tapioca flour, dissolved in 2 tablespoons water
  • Sugar, salt, ground pepper, and mushroom stock powder, to taste
  • Water and cooking oil, as needed

Instructions:

  1. Prepare the Vegetables: Peel and slice the carrots into thin rounds. Cut the broccoli into small florets. Set aside.

  2. Sauté Aromatics: Heat a generous amount of cooking oil in a large pan over medium heat. Add the finely chopped onion and minced garlic, sautéing until fragrant and translucent.

  3. Add Chili Peppers: Chop the red chili peppers and add them to the pan. Stir-fry for a few minutes to release their flavor.

  4. Cook the Carrots: Add the sliced carrots to the pan. Stir-fry for a couple of minutes, then pour in a small amount of water to help cook the carrots.

  5. Season the Dish: Season with sugar, salt, mushroom stock powder, and ground pepper to taste. Mix well.

  6. Add the Sauce: Stir in some oyster sauce, adjusting the quantity based on your taste preferences. Ensure the ingredients are well combined.

  7. Thicken the Sauce: Gradually add the cornstarch or tapioca flour mixture to the pan, stirring continuously to avoid lumps. This will help thicken the sauce.

  8. Cook the Broccoli and Chicken Meatballs: Once the sauce has thickened and the carrots are tender, add the broccoli florets and chicken meatballs. Cook until the broccoli is vibrant green and tender but still crisp.

  9. Finish and Serve: Taste and adjust the seasoning if necessary. Stir the mixture briefly to ensure everything is well-coated and heated through. Remove from heat and serve immediately.
