Recipe: Yamie Ayam (Chicken Noodle Soup)
Ingredients:
- 1 free-range chicken, cleaned and chopped
- 5 cloves garlic, finely chopped
- 3 tsp fish sauce
- 1 tsp chicken or mushroom bouillon powder
- Ground pepper, to taste
- 1 tsp granulated sugar
For the Broth:
- 3 cloves garlic, finely chopped
- 10 meatballs
- 1 stalk spring onion, thinly sliced
For the Chili Paste (Sambal):
- 12 red bird’s eye chilies
- 3 cloves garlic
- Salt, to taste
- 1/2 tsp granulated sugar
- 1/2 tsp chicken or mushroom bouillon powder
- 1/2 tsp vinegar
- 5-6 tbsp hot water
Noodle Seasoning:
- 4-5 tbsp chicken oil (rendered from frying chicken skin)
- 1 tbsp fish sauce
- 2 tsp sesame oil
- Ground pepper, to taste
- 1 tsp chicken or mushroom bouillon powder
Additional Ingredients:
- Dry or fresh noodles
- Blanched green mustard greens
- Sliced spring onions
- Fried shallots

Cook the Chicken: Boil the chicken until tender. Remove, shred the meat, and set aside.

Prepare the Broth: Bring a pot of water to a boil. Add meatballs, chopped garlic, bouillon powder, salt, and pepper to taste. Cook until garlic is tender and fragrant. Adjust seasoning as needed. Add spring onion, then turn off the heat.

Prepare the Chicken Topping: In a pan, sauté chopped garlic until fragrant. Add fish sauce and shredded chicken. Stir well. Season with salt, sugar, bouillon powder, and pepper to taste. If needed, add water and simmer until the sauce thickens. Set aside.

Make the Chili Paste (Sambal): Boil red chilies and garlic until soft. Blend with salt, sugar, bouillon powder, vinegar, and hot water until smooth. Transfer to a bowl.

Prepare the Noodle Seasoning: Combine chicken oil, fish sauce, sesame oil, pepper, and bouillon powder in a bowl. Mix well.

Assembly: Cook a serving of noodles according to package instructions. Drain well and toss with 1 tbsp of noodle seasoning until evenly coated. Top with chicken topping, blanched mustard greens, spring onions, and fried shallots. Serve with meatball broth and chili paste on the side.
