Egg Rolls with Chicken and Shrimp (Egg Rolls Ayam Udang)

Ingredients:

Filling:

  • 250 grams minced chicken
  • 150 grams minced shrimp
  • 1 egg
  • 3/4 tablespoon sesame oil (optional)
  • 1/2 tablespoon oyster sauce
  • 1/2 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon granulated sugar
  • 1/2 tablespoon garlic powder
  • 1/4 teaspoon bouillon powder
  • 1 scallion, finely chopped
  • 3.5 tablespoons tapioca flour (muncung)

Wrapper:

  • 2 eggs
  • 80 ml water
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 1/2 tablespoon melted margarine
  • A pinch of salt

Instructions:

  1. Prepare the Filling:

    • In a mixing bowl, combine all the filling ingredients: minced chicken, minced shrimp, egg, sesame oil (if using), oyster sauce, soy sauce, salt, pepper, granulated sugar, garlic powder, bouillon powder, chopped scallion, and tapioca flour.
    • Mix everything thoroughly until well combined. Set aside.
  2. Make the Wrappers:

    • In another bowl, whisk together the eggs, water, all-purpose flour, cornstarch, melted margarine, and a pinch of salt until smooth.
    • Strain the batter to remove any lumps.
    • Heat a non-stick pan over medium heat and pour a small amount of batter into the pan, swirling it around to create a thin, even layer.
    • Cook until the wrapper sets and is cooked through, then remove from the pan. Repeat with the remaining batter.
  3. Assemble the Egg Rolls:

    • Take one wrapper and place it on a flat surface.
    • Spoon a portion of the filling onto the wrapper and spread it out evenly.
    • Roll the wrapper around the filling, using aluminum foil to help shape the rolls into perfect cylinders.
    • Repeat with the remaining wrappers and filling.
  4. Steam the Egg Rolls:

    • Place the wrapped rolls in a steamer and steam for 20 minutes.
    • Once cooked, remove the rolls from the steamer and let them cool.
    • After cooling, cut the rolls into desired sizes.
  5. Final Preparation:

    • The egg rolls are now ready to be fried until golden brown.
    • Alternatively, you can store the cut egg rolls in the freezer for later use.
