Clear Chicken Soup (Sop Ayam Bening)
Ingredients:
- 1/2 kg chicken pieces
- 1 large daikon radish
- 1 large broccoli
- 1 large carrot
- 2 cloves garlic, crushed
- 3 shallots, thinly sliced and fried
- 1 tomato
- A small piece of ginger
- Water, as needed
- Sugar, to taste
- Salt, to taste
- Seasoning, to taste
Instructions:

Begin by thoroughly cleaning the chicken. Place the chicken pieces in a pot of water and bring to a boil. Once boiling, discard the water to remove excess fat. Refill the pot with fresh water and simmer the chicken until tender.

While the chicken is cooking, prepare the vegetables. Cut the daikon radish, broccoli, and carrot into desired sizes. Blanch the vegetables briefly in boiling water.

Crush the garlic and ginger together. Slice the shallots thinly and fry them until crispy. These fried shallots will be used as a garnish.

When the chicken is nearly cooked through, add the crushed garlic and ginger to the pot. Let them cook until fragrant.

Add the blanched vegetables to the pot along with salt, sugar, and seasoning to taste. Stir and adjust the seasoning according to your preference.

Continue to simmer until the vegetables are tender and the flavors meld together.

Serve the clear chicken soup hot, garnished with the crispy fried shallots.
