Grilled BBQ Chicken (Ayam Bakar Bumbu BBQ)
Ingredients:
- 1 whole chicken (approximately 750 grams)
- 4 tablespoons soy sauce (kecap manis)
- 5 tablespoons barbecue powder
- 3 tablespoons soy sauce (kecap asin)
- 3 tablespoons tomato sauce
- 4 cloves garlic
- 2 tablespoons teriyaki sauce
- 1 packet black pepper powder
- 2 tablespoons margarine
- 1/4 cup water
- 3 tablespoons tamarind water (air asam)

Prepare the Chicken:
- Begin by cleaning the chicken thoroughly. Rub it with lime juice and let it marinate for about 30 minutes to remove any strong odors and to tenderize the meat.

Pre-cook the Chicken:
- In a saucepan, bring 1/4 cup of water to a boil. Add the chicken and simmer briefly, just to par-cook it. Remove the chicken from the pan and set aside. Reserve the cooking liquid for later use.

- Finely chop the garlic cloves. In a pan, melt the margarine over medium heat and sauté the garlic until it becomes fragrant.
- Add the partially cooked chicken to the pan. Stir in the teriyaki sauce, tomato sauce, soy sauce, barbecue powder, and black pepper. Mix well to coat the chicken evenly.
- Pour in the reserved chicken cooking liquid and tamarind water. Stir to combine all the ingredients. Cover the pan with a lid and let it simmer on low heat for about 1 hour, occasionally turning the chicken to ensure even cooking.
