Ground Beef Filling for Fried Bread Rolls

Ingredients:

  • 300 grams ground beef
  • 1 onion, finely chopped
  • 3 shallots, thinly sliced
  • 1 stalk green onion, finely sliced
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • Sweet soy sauce (to taste)
  • Black pepper (to taste)
  • White pepper (to taste)
  • Salt (to taste)
  • Sugar (to taste)
  • 1 tablespoon all-purpose flour, dissolved in water (as a thickener)
  • Water (as needed)

Instructions:

  1. Sauté Aromatics: In a large skillet or wok, heat a small amount of oil over medium heat. Add the finely chopped onion and sliced shallots. Cook, stirring frequently, until the onions and shallots are fragrant and golden brown.

  2. Cook Beef: Increase the heat to medium-high and add the ground beef to the skillet. Break up the meat with a spatula and cook until it has fully browned and the color has changed.

  3. Add Seasonings: Stir in the oyster sauce, soy sauce, and sweet soy sauce. Season with black pepper, white pepper, salt, and sugar. Mix well to ensure the beef is evenly coated with the sauces and spices.

  4. Simmer and Adjust: Pour in enough water to just cover the beef mixture. Stir well, bring the mixture to a boil, then reduce the heat and let it simmer until the flavors meld and the mixture thickens slightly. Taste and adjust seasoning if necessary.

  5. Thicken Filling: Before the liquid reduces completely, slowly add the flour-water mixture while stirring continuously. Cook until the filling has thickened to your desired consistency, but avoid letting it become too dry.

  6. Finish with Green Onions: Stir in the sliced green onions and cook for another minute until they are wilted and well incorporated.

  7. Cool and Use: Remove from heat and allow the filling to cool slightly. This savory beef mixture is now ready to be used as a delicious filling for fried bread rolls or any other preferred pastry.
