Ayam Goreng Ungkep: Traditional Indonesian Marinated Fried Chicken

Ingredients:

  • 1 whole chicken, cut into 12 pieces
  • 1 packet of instant fried chicken seasoning
  • 8 shallots
  • 5 cloves of garlic
  • A pinch of salt (optional; the seasoning is usually salty enough)
  • 2 kaffir limes (lime leaves can be used if unavailable)
  • 1 stalk of lemongrass, bruised
  • Enough water to cover the chicken

Instructions:

  1. Prepare the Chicken: Begin by thoroughly washing the chicken pieces. Squeeze the juice of the kaffir limes over the chicken and let it sit for a few minutes. This will help to tenderize the meat and impart a fresh, citrusy flavor.

  2. Pre-cook the Chicken (Optional): For a more refined taste, briefly boil the chicken. Place the chicken pieces in a pot with enough water to cover them. Bring the water to a boil, then reduce the heat and simmer for a few minutes. This step helps to remove any strong odor from the chicken. Do not cook the chicken completely; you want it partially cooked at this stage. Remove the chicken from the pot and drain.

  3. Make the Spice Paste: While the chicken is draining, finely chop or grind the shallots and garlic into a paste.

  4. Combine Ingredients: In a large pot, add the partially cooked chicken pieces. Pour in just enough water to submerge the chicken. Add the freshly made shallot and garlic paste to the pot.

  5. Add Seasonings: Stir in the instant fried chicken seasoning and the bruised lemongrass stalk. Mix well to ensure the seasoning is evenly distributed.

  6. Simmer the Chicken: Turn on the heat to high and bring the mixture to a boil. Once boiling, reduce the heat and simmer. Cook the chicken until the liquid has reduced and the sauce has thickened, approximately 45 minutes. The chicken should be well-coated with the seasoning paste, and most of the liquid should be evaporated.

  7. Cool and Store: Once the chicken is done, remove it from the heat and transfer it to a container. Let it cool. The marinated chicken can be stored in the refrigerator until you’re ready to fry it. Alternatively, you can fry the chicken immediately if preferred.

  8. Fry the Chicken: When ready to eat, heat oil in a frying pan over medium-high heat. Fry the marinated chicken pieces until golden brown and crispy on the outside. Serve hot.
