Savory Indonesian Beef Bone Soup with Vegetables

Indonesian Beef Bone Soup with Vegetables (Sop Tulang Sapi With Sayuran)

Ingredients:

  • 500 grams beef bones
  • 1 large carrot, peeled and sliced
  • 2 oyong (ridge gourd) or gambas, peeled and sliced
  • 4 green beans, trimmed and cut
  • 2 sheets of Chinese cabbage, sliced
  • 2 stalks green onions, sliced (approximately 1 cm pieces)
  • 1/2 teaspoon ground cinnamon
  • 3 cloves
  • Salt to taste
  • 750 ml water
  • Sugar to taste

For the Spice Paste:

  • 4 cloves garlic
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions:

  1. Prepare the Ingredients:

    • Wash and cut the beef bones into manageable pieces.
    • Slice the carrot, oyong (or gambas), and Chinese cabbage.
    • Trim and cut the green beans.
    • Slice the green onions into 1 cm pieces.
  2. Cook the Beef Bones:

    • In a large pot, add the beef bones and enough water to cover them. Bring to a boil and then reduce to a simmer. Add a pinch of salt and cook until the meat is tender and falling off the bones. This may take around 1-2 hours. Skim off any foam that forms on the surface.
  3. Prepare the Spice Paste:

    • While the bones are cooking, blend the garlic, black pepper, and nutmeg into a smooth paste using a food processor or mortar and pestle.
  4. Sauté the Spice Paste:

    • Heat a small amount of oil in a skillet over medium heat. Add the spice paste and sauté until fragrant and golden brown. Remove from heat.
  5. Combine Ingredients:

    • Once the beef bones are tender, add the sautéed spice paste to the pot with the beef bones.
    • Add the cloves and ground cinnamon. Stir to combine.
    • Add the sliced carrot, green beans, and a bit of sugar. Stir well and let it cook until the carrots are tender.
    • Next, add the Chinese cabbage, green onions, and oyong (or gambas). Stir and cook until all the vegetables are tender and cooked through.
  6. Season and Serve:

    • Taste the soup and adjust the seasoning with more salt or sugar as needed.
    • Once everything is well-cooked and seasoned, remove from heat.
  7. Serve:
