Kondro Iga Sapi: Savory Beef Ribs Stew
Ingredients:
- 1 kg beef ribs, cleaned and cut into pieces
- 5 cloves garlic
- 6 shallots
- ½ tablespoon ground black pepper
- 1 tablespoon coriander seeds
- 3 candlenuts
- 2 thumb-sized pieces of galangal
- A pinch of turmeric (or a small piece of fresh turmeric if available)
- Red beans (soaked)
- 2 stalks lemongrass, bruised
- 2 bay leaves
- Tamarind paste
- Salt to taste
- 1 cinnamon stick
Instructions:
-
Begin by boiling the cleaned beef ribs in a pot with lemongrass, cinnamon stick, bay leaves, and tamarind paste until tender. This process allows the ribs to absorb the flavors from the aromatics.
-
While the ribs are cooking, prepare the spice paste. In a mortar and pestle or food processor, blend the garlic, shallots, candlenuts, ground black pepper, coriander seeds, and turmeric into a smooth paste.
-
Heat a bit of oil in a pan over medium heat. Add the spice paste to the pan and sauté until the mixture becomes fragrant and golden brown. This step intensifies the flavors and adds depth to the dish.
-
Transfer the sautéed spice paste into the pot with the boiling beef ribs. Stir well to combine all the ingredients.
-
Add the soaked red beans to the pot and continue to cook for an additional 10 minutes, allowing the flavors to meld together and the beans to soften.
-
Taste the stew and adjust the seasoning with salt as needed.
-
Serve the Kondro Iga Sapi hot, garnished with fresh herbs if desired, alongside steamed rice or your favorite side dishes.
This hearty and aromatic beef ribs stew is perfect for a comforting meal, showcasing a rich blend of traditional spices and tender meat. Enjoy the burst of flavors in every bite!
