Terik Sapi with Coconut Milk

Ingredients:

  • 500g beef, thinly sliced
  • 2 tablespoons Blue Band butter
  • 1 small onion
  • 2 potatoes, cut into cubes and fried
  • 1 teaspoon salt
  • 1 teaspoon Masako seasoning
  • 50g palm sugar
  • 1 tablespoon granulated sugar
  • For the spice paste:
    • 7 shallots
    • 4 garlic cloves
    • 1 tablespoon coriander seeds
    • 1 teaspoon black pepper
    • 1 cm ginger
    • 1/4 nutmeg
    • 2 candlenuts
    • (Optional: 3 cloves for extra spice)
  • For the boiling spices:
    • 3 bay leaves
    • 2 kaffir lime leaves, torn into pieces (optional)
    • 2 stalks lemongrass, bruised
    • 2 pieces galangal, bruised
  • Fried shallots and tomato for garnish

Steps:

  1. Marinate the Beef:

    • Rub the sliced beef with pineapple. Let it sit for about 15 minutes while you prepare the spice paste.
  2. Prepare the Spice Paste:

    • Blend the shallots, garlic, coriander seeds, black pepper, ginger, nutmeg, and candlenuts until smooth. Set aside.
  3. Cook the Beef:

    • Rinse the beef to remove the pineapple residue, then cook it briefly in about 1.5 liters of water with the boiling spices (bay leaves, kaffir lime leaves, lemongrass, and galangal). Simmer for approximately 30 minutes. Do not discard the cooking liquid; set it aside.
  4. Sauté the Aromatics:

    • Heat the Blue Band butter in a pan over medium heat. Sauté the chopped onion until fragrant. Add the prepared spice paste and cook until aromatic.
  5. Combine Ingredients:

    • Add the cooked beef (drained from the cooking liquid) to the pan with the spice paste. Stir until the beef changes color and turns brown. Incorporate the fried potatoes and a small sachet of Bango soy sauce (about 1,000 IDR from the store). Mix well.
  6. Simmer and Season:

    • Pour in the reserved beef broth. Add the palm sugar, salt, Masako seasoning, and granulated sugar. Adjust the seasoning to taste. Simmer until the liquid reduces and the flavors meld together. If necessary, add more water as needed to keep the dish moist.
  7. Final Touches:

    • Once the liquid has reduced to a thicker consistency and the seasoning is well-integrated, add chopped tomato and stir briefly. Garnish with fried shallots before serving.
  8. Serve:

    • Present the Terik Sapi with a garnish of fried shallots and enjoy with your favorite accompaniments.

Tips:

  • For added depth, you can include cloves in the spice paste.
  • Adjust the sweetness and saltiness according to your taste preferences.
