Ingredients:

  • 1 whole chicken breast (dada ayam utuh) – cut into preferred pieces
  • 3 shallots (bawang merah)
  • 2 cloves garlic (bawang putih)
  • 3 candlenuts (kemiri)
  • 1 onion (bawang bombay) – sliced
  • 1 bay leaf (daun salam)
  • A piece of galangal (laos)
  • Salt and pepper (lada) to taste
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 2 tablespoons butter (mentega)
  • 1 teaspoon oyster sauce (saos tiram)
  • 1 tablespoon chili sauce (saus sambal)
  • 2 tablespoons granulated sugar (gula pasir)
  • Oil for frying

Instructions:

  1. Prepare the Chicken:

    • Rinse the chicken pieces thoroughly under cold water.
    • In a pot, add the chicken and enough water to cover it. Add the galangal, bay leaf, and a pinch of salt. Bring to a boil, then simmer for about 15 minutes until the chicken is cooked through and tender.
  2. Fry the Chicken:

    • Remove the chicken from the pot and drain well. Heat oil in a pan over medium heat.
    • Fry the chicken pieces until they are golden brown and crispy. Remove from the pan and set aside to drain on paper towels.
  3. Make the Spice Paste:

    • While the chicken is frying, blend the shallots, garlic, and candlenuts into a smooth paste using a food processor or mortar and pestle.
  4. Cook the Sauce:

    • In a separate pan, heat the butter over medium heat. You can add a bit of cooking oil if needed to prevent the butter from burning.
    • Sauté the spice paste until fragrant and golden brown.
    • Add the sugar, sweet soy sauce, oyster sauce, and chili sauce to the pan. Stir well to combine.
    • Incorporate the sliced onion and add about 3 tablespoons of the chicken broth from the pot. Stir to combine and let the mixture cook for a few minutes until the onions are slightly softened.
  5. Combine and Serve:

    • Add the fried chicken pieces to the pan with the sauce. Toss well to coat the chicken evenly with the sauce.
    • Cook for an additional 3 minutes, allowing the flavors to meld and the chicken to absorb the sauce.
  6. Finish and Serve:
