Indonesian Pindang Patin Recipe

Ingredients:

  • 1 kg catfish (cleaned, soaked briefly in vinegar & salt)
  • Ground Ingredients:
    • 3 shallots
    • 4 cloves garlic
    • 3-4 red chilies (adjust to taste)
    • 1 piece young galangal
    • 1 piece ginger
    • 1 piece turmeric
  • 2 stalks lemongrass, bruised
  • 3 bay leaves
  • 2 kaffir lime leaves
  • 1 red tomato, diced
  • 2 medium-sized scallions, chopped
  • Water, as needed
  • Sugar, vinegar, and salt, to taste

Instructions:

  1. In a large pan or wok, combine water with the ground ingredients.
  2. Add bay leaves, lemongrass, and kaffir lime leaves.
  3. Once it starts to boil, add the cleaned catfish.
  4. Season with salt, sugar, and a splash of vinegar to taste.
  5. Cook until the fish is almost done, then add diced tomato and chopped scallions.
  6. Simmer for a few more minutes until the flavors meld together.
  7. Serve hot with steamed rice.
