Indonesian Pindang Patin Recipe
Ingredients:
- 1 kg catfish (cleaned, soaked briefly in vinegar & salt)
- Ground Ingredients:
- 3 shallots
- 4 cloves garlic
- 3-4 red chilies (adjust to taste)
- 1 piece young galangal
- 1 piece ginger
- 1 piece turmeric
- 2 stalks lemongrass, bruised
- 3 bay leaves
- 2 kaffir lime leaves
- 1 red tomato, diced
- 2 medium-sized scallions, chopped
- Water, as needed
- Sugar, vinegar, and salt, to taste
Instructions:
- In a large pan or wok, combine water with the ground ingredients.
- Add bay leaves, lemongrass, and kaffir lime leaves.
- Once it starts to boil, add the cleaned catfish.
- Season with salt, sugar, and a splash of vinegar to taste.
- Cook until the fish is almost done, then add diced tomato and chopped scallions.
- Simmer for a few more minutes until the flavors meld together.
- Serve hot with steamed rice.
