Instructions
- Prepare the Eggs: Fry the eggs one by one until fully cooked, then set aside.
- Sauté Aromatics: In a pan, heat oil and sauté the minced garlic, sliced shallots (or onion), green bird’s eye chili, and curly green chili until fragrant. Add the smashed galangal and bay leaf, continuing to sauté until aromatic.
- Create the Sauce: Add a splash of water, then stir in the tauco, salt, sugar, ground pepper, and flavor enhancer. Adjust seasoning to your liking.
