Telur Risik ala Saya

Ingredients:

  • 3 large chicken eggs (free-range if possible)
  • 3 shallots, thinly sliced
  • 3 cloves garlic, finely minced
  • 1 red chili pepper, sliced diagonally
  • 1 green chili pepper, sliced diagonally
  • 1 stalk green onion, chopped
  • 1/2 tomato, diced
  • 2 tablespoons oyster sauce
  • 1 tablespoon sweet soy sauce
  • 1/2 tablespoon soy sauce (optional, can replace with a pinch of salt)
  • A pinch of sugar
  • A pinch of salt

Instructions:

  1. Prepare the Ingredients: Begin by heating a non-stick frying pan (teflon) over medium heat. Add the sliced shallots and minced garlic to the pan. Sauté them until they become fragrant and translucent.

  2. Add the Vegetables: Next, incorporate the sliced red and green chili peppers, chopped green onions, and diced tomato into the pan. Continue to cook until the vegetables are softened.

  3. Season the Mixture: Stir in the oyster sauce, sweet soy sauce, and soy sauce (if using). Mix well to ensure the vegetables are evenly coated with the sauces. Allow the mixture to cook for an additional minute to let the flavors meld.

  4. Add the Eggs: Carefully crack the eggs into the pan over the vegetable mixture, one at a time. Sprinkle a pinch of salt over the eggs. Do not stir the eggs; instead, allow them to cook undisturbed.

  5. Simmer: Reduce the heat to low and cover the pan with a lid. Let the eggs cook gently until they are fully set. The cooking time may vary depending on your preference for egg doneness.
