Instant Noodle Soup with Chicken Broth
Ingredients:
- Instant Noodles: 2 packs of Sarimi Soto (or any instant noodles of your choice)
- Eggs: 2 (chicken or duck, depending on your preference)
- Fried Shallots: For garnish
- For the Broth:
- Chicken: 1/2 kg (cut into pieces)
- Garlic: 5 cloves
- Kaffir Lime Leaves: 2 leaves
- Ground Pepper: To taste
- Salt: To taste
Instructions:
-
Prepare the Broth:
- Clean the chicken thoroughly and place it into a pot.
- Crush the garlic and tear the kaffir lime leaves into pieces.
- Add the crushed garlic and kaffir lime leaves to the pot with the chicken.
- Season with ground pepper and salt.
- Pour enough water into the pot to cover the chicken.
- Bring the water to a boil, then reduce the heat and let it simmer until the chicken is cooked through and the flavors meld into a rich broth. This may take around 30-45 minutes.
-
Prepare the Noodles:
- Bring a separate pot of water to a boil.
- Add the instant noodles and cook according to the package instructions, usually about 2-3 minutes.
- Once cooked, drain and rinse the noodles under cold water. This step helps to remove any residual wax coating from the noodles.
-
Assemble the Soup:
- After the broth is ready, strain it to remove any solids.
- Return the strained broth to the pot and bring it back to a gentle simmer.
- Crack the eggs into the simmering broth and cook until they are set to your liking, about 2-3 minutes for soft-boiled or longer for firmer eggs.
- Add the pre-cooked instant noodles to the pot and cook for an additional 2-3 minutes, allowing the noodles to soak up the flavors of the broth.
-
Serve:
- Ladle the soup into bowls.
- Stir in the seasoning packet from the instant noodles, adjusting to taste.
- Top each bowl with fried shallots for added flavor and crunch.
- Serve hot and enjoy your comforting bowl of instant noodle soup with chicken broth!
