Description:

Indulge in the delightful flavors of these Veggie Rice Balls, a savory treat bursting with wholesome goodness. With a blend of lentils, rice, and an array of fresh vegetables, these balls are not only delicious but also vegan-friendly and easy to make.

Ingredients:

  • 1/4 cup lentils
  • 1/4 cup rice
  • 1/2 onion
  • 1 tomato
  • 1/4 cup mushroom
  • 1/4 cup green bell pepper
  • 1/4 cup cauliflower
  • 1/2 tablespoon soy sauce
  • 3 – 5 drops liquid smoke
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1/8 cup oatmeal

Instructions:

  1. Cook Rice and Lentils: In a pot, cook the rice and lentils until soft, which should take approximately 30 minutes.

  2. Prepare Vegetables: Meanwhile, in a large skillet sprayed with non-stick cooking spray or oil, cook the onions until tender.

  3. Cook Veggies: Add the rest of the veggies (tomato, mushroom, green bell pepper, cauliflower) to the skillet and cook until very soft, approximately 20-25 minutes. Add water if needed to prevent sticking.

  4. Combine Ingredients: In a large bowl, combine the hot rice and lentils with the cooked veggies. Mash the mixture well to integrate the flavors.

  5. Add Seasonings: To the mixture, add soy sauce, liquid smoke, salt, pepper, paprika, cumin, and oatmeal. Mix well to ensure all ingredients are evenly distributed.

  6. Form Rice Balls: Shape the mixture into 10 rice balls or 4 patties if you prefer to make veggie burgers. Place them on a plate and refrigerate for 30 minutes to firm up.

  7. Fry Rice Balls: In a frying pan, heat oil over medium heat. Add the rice balls or patties and fry, turning them frequently, until they are golden brown and crispy on all sides.

  8. Serve: Serve the veggie rice balls warm as a delightful snack or as part of a meal. They pair wonderfully with a fresh green salad for a wholesome dining experience.

  9. Optional: If desired, you can also use the mixture to make veggie burgers. Simply shape them into patties and follow the same frying instructions.
