  • Preparation Time: 15 minutes
  • Cooking Time: 10 minutes
  • Total Time: 25 minutes
  • Servings: 24 slices

Ingredients:

  • 1 baguette
  • 1 tablespoon olive oil
  • 12 mushrooms (mixed varieties)
  • 1 onion
  • 2 garlic cloves
  • 1/2 teaspoon dried basil leaves
  • 1 tablespoon vinegar
  • 1/2 cup water
  • 2 slices smoked ham
  • 1/2 cup fresh parsley
  • 2 tablespoons asiago cheese
  • 1 tablespoon parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Prepare Baguette:

    • Slice the baguette into 1/3 inch thick rounds.
    • Brush each slice with a little olive oil.
    • Place the slices under the broiler until lightly golden in color. Set aside.
  2. Prepare Mushroom Mixture:

    • Clean the mushrooms, slicing small ones and chopping larger ones, until you have about 4 cups in total.
    • In a large nonstick frypan, heat the remaining olive oil over medium-high heat.
    • Add the onion and cook until lightly softened, about 1 minute.
    • Stir in the mushrooms and garlic, and cook for 4 minutes until they start to release their juices.
    • Sprinkle in the dried basil, then add the vinegar and water. Cook for 1-2 minutes or until the liquid evaporates.
    • Remove from heat.
  3. Combine Ingredients:

    • Stir in the smoked ham, parsley, and half of the asiago cheese into the mushroom mixture.
    • Season the mixture to taste with salt and pepper.
  4. Assemble Crostini:

    • Spoon the mushroom mixture onto the toasted baguette slices.
    • Sprinkle the remaining asiago cheese over the top.
  5. Make Ahead:

    • If preparing in advance, cool the mushroom filling, cover, and refrigerate.
    • Before serving, warm the filling briefly in the microwave or in a frypan.
    • Spoon the warmed mixture onto the toasted bread and sprinkle with cheese.
  6. Storage:

    • Crostini can also be made ahead and stored in an airtight container at room temperature for up to 2 days.
