Mushroom and Sausage Purses with Madeira Cream Sauce

Ingredients:

  • 1/2 cup Madeira wine
  • 2 shallots, finely chopped
  • 2 sausages, cooked and crumbled
  • 1 1/2 tbsp butter
  • 1 1/2 tbsp olive oil
  • 1/4 lb mushrooms, sliced
  • 2 shallots, minced
  • 1 1/2 tsp dried thyme
  • 1/4 cup cream cheese
  • 1/2 cup ricotta cheese
  • 1/2 lb filo pastry sheets
  • 16 tbsp butter, melted (for brushing)
  • Salt and pepper to taste

For the Madeira Cream Sauce:

  1. In a saucepan, boil the Madeira wine and chopped shallots until almost all the liquid evaporates, approximately 5 minutes.
  2. Add the stock to the saucepan and continue boiling until it reduces to about 1/2 cup, around 10 minutes.
  3. Pour in the cream and simmer until the sauce thickens to your desired consistency, approximately 10 minutes. Set aside.

For the Mushroom and Sausage Purses:

  1. Cook the sausages in a skillet until they are no longer pink, breaking them up with a fork as they cook.
  2. Transfer the cooked sausages to a bowl using a slotted spoon, and discard any excess fat from the skillet.
  3. To the same skillet, add 1/4 cup of butter and olive oil, and sauté the mushrooms until they are golden brown, about 6 minutes.
  4. Stir in the minced shallots and dried thyme, and continue cooking until most of the liquid has evaporated, about 5 minutes.
  5. Add the cooked mushroom mixture to the bowl with the sausages, and allow it to cool completely.
  6. In a large bowl, mix together the cream cheese and ricotta cheese until well combined.
  7. Add the cooled mushroom and sausage mixture to the cheese mixture, and stir until evenly distributed.

Assembly:

  1. Preheat your oven to 400°F (200°C).
  2. Keep the filo pastry sheets covered with a damp towel to prevent them from drying out.
  3. Place two sheets of filo pastry on your work surface, and cut them into 12-inch squares.
  4. Brush each square with melted butter.
  5. Spoon 1/8 of the mushroom and sausage filling into the center of each square.
  6. Gather up the corners of the filo pastry to form a bundle, and gently twist a strip of filo pastry around the top to secure it.
  7. Tie the strip in a loose knot at the center to create a purse-like shape.
  8. Repeat this process with the remaining ingredients to make a total of 8 purses.
  9. Place the assembled purses on a baking sheet, and brush them with melted butter.
  10. Bake in the preheated oven until they are golden brown and crispy, approximately 20 minutes.

  1. Warm the Madeira cream sauce over low heat until it simmers.
  2. Spoon a generous amount of the sauce onto each serving plate.
  3. Carefully place a mushroom and sausage purse on top of the sauce on each plate.
