Oregano Beef Stew

Ingredients:

  • 250 g beef, diced
  • 1 teaspoon ground black pepper
  • 100 g flour (75 g rice flour + 25 g tapioca flour)
  • 1 carrot, peeled and thinly sliced
  • 1 small cauliflower, cut into florets
  • 1 onion, chopped
  • 3 cloves garlic, coarsely chopped
  • Seasonings:
    • 2 tablespoons tomato sauce
    • ยฝ teaspoon ground nutmeg
    • ยฝ teaspoon ground black pepper
    • ยฝ teaspoon dried oregano
    • Salt to taste
  • 250 ml beef broth (or more as needed)
  • Cooking oil (2 tablespoons used here for frying)

Instructions:

  1. Prepare the Beef: Clean the beef thoroughly and pat dry. Sprinkle the ground black pepper evenly over the beef and toss to coat.

  2. Coat the Beef: Add the flour mixture (rice flour and tapioca flour) to the beef. Toss until the beef is well-coated. Let it sit for about 30 minutes to allow the coating to adhere.

  3. Fry the Beef: Heat a small amount of oil (2 tablespoons) in a pan over medium heat. Fry the beef pieces until they turn golden brown and crispy on the outside. Remove the beef from the pan and set aside on a plate lined with paper towels to drain excess oil.

  4. Sautรฉ the Aromatics: In the same pan, with the remaining oil, sautรฉ the garlic until fragrant. Add the chopped onion and continue to cook until the onion becomes translucent and slightly tender.

  5. Cook the Vegetables: Add the coated beef back into the pan along with the carrot slices and cauliflower florets. Stir to combine and cook for a few minutes.

  6. Add the Broth: Pour in the beef broth. Stir well and bring to a simmer. Cook until the vegetables are tender and the beef is cooked through, adjusting the heat as necessary.

  7. Mix the Seasonings: While the stew is cooking, mix the tomato sauce, ground nutmeg, ground black pepper, dried oregano, and salt in a separate bowl. You can add a little bit of broth or water to this mixture to help it blend smoothly.

  8. Season and Simmer: Add the seasoning mixture to the pan with the beef and vegetables. Stir well to combine and adjust the seasoning to taste. Let it simmer for a few more minutes to allow the flavors to meld together.

  9. Final Touches: Once the vegetables are tender and the beef is cooked to your liking, remove the pan from the heat.

  10. Serve: Garnish with a pinch of dried oregano if desired and serve hot.
