Soto Tulang Sapi Presto Recipe

Ingredients:

  • 800 grams beef bones
  • 2 stalks green onions
  • 2 stalks celery
  • 1 onion
  • 6 kaffir lime leaves
  • 2 stalks lemongrass
  • 3 cm ginger
  • 3 cm galangal
  • Spice Bundle:
    • 1/2 teaspoon coriander
    • 1/2 teaspoon cumin
    • 1/2 teaspoon black pepper
    • 1 cinnamon stick
    • 1 clove
    • 1 nutmeg
  • Ground Spices:
    • 10 cloves garlic
    • 6 shallots
    • 4 candlenuts
  • Salt and Knorr seasoning (to taste)
  • Sugar (to taste)
  • Cooking oil (for sautéing)
  • 2 liters water
  • Accompaniments:
    • Boiled eggs
    • Sambal (chili sauce)
    • Shredded cabbage
    • Bean sprouts
    • Fried shallots
    • Cooked rice

Instructions:

  1. Prepare the Ingredients:

    • Begin by heating oil in a pan. Sauté the garlic, shallots, ginger, and galangal until they are fragrant and golden brown. Set aside.
    • Crush the spices from the spice bundle (coriander, cumin, black pepper, cinnamon stick, clove, and nutmeg) using a mortar and pestle or spice grinder.
  2. Cook the Beef Bones:

    • In the same pan, add a bit more oil if needed and sauté the crushed spices along with the lemongrass and kaffir lime leaves until aromatic.
    • Pour in 2 liters of water and bring to a boil. Add the beef bones to the pan and let it simmer.
  3. Pressure Cooking:

    • Transfer everything to a pressure cooker. Close the lid and cook under high pressure for 20 minutes. This will tenderize the beef bones and infuse the broth with rich flavors.
  4. Final Touches:

    • After pressure cooking, open the lid and check the seasoning. Adjust salt and Knorr seasoning as needed. If the broth is too strong, add a bit more water and bring to a boil again.
    • Slice the green onions and celery. Prepare the accompaniments: slice the boiled eggs, shred the cabbage, and rinse the bean sprouts.
  5. Serve:

    • In individual bowls, add a portion of shredded cabbage, bean sprouts, and a few slices of boiled egg.
    • Ladle the hot beef bone broth over the prepared ingredients. Garnish with fried shallots and fresh green onions.
    • Serve with a side of sambal and cooked rice for a complete meal.
