  1. Preheat Oven: Preheat your oven to 350°F (175°C).

  2. Prepare Dish: Brush a 4-cup ovenproof dish with melted butter or oil.

  3. Cook Peas: In a large saucepan, combine the yellow split peas, chopped onion, and fresh rosemary sprig. Cover with water and place the lid on the saucepan. Cook over gentle heat until the peas start to split.

  4. Drain and Mash: Drain the cooked peas and discard the rosemary sprig. Mash the peas until smooth.

  5. Blend Ingredients: Add the eggs, melted butter, white pepper, salt, and a splash of malt vinegar to the mashed peas. Blend everything together until smooth and well combined.

  6. Bake: Pour the mixture into the prepared ovenproof dish. Place this dish into a larger baking pan and fill the pan with water so it comes halfway up the side of the dish. This water bath helps ensure gentle cooking.

  7. Bake Until Set: Bake the pease pudding in the water bath for 30 to 45 minutes, or until the pudding sets and becomes firm.

  8. Serve: Remove from the oven and serve warm alongside ham or boiled beef. It can also be chilled and served cold, spread on bread.
