Savory Sea Milkfish in Sardine Sauce
Ingredients:
- 2 whole sea milkfish, cut into 3 pieces each
- 4 ripe tomatoes
- 3 cloves garlic
- 6 shallots
- 5 chili peppers (can be a mix of bird’s eye, dried, or large chili peppers according to preference)
- 2 tablespoons oyster sauce
- 1 teaspoon salt
- Palm sugar to taste
- 1 onion
- 1 leek
Preparation Steps:

Prepare the Fish:
- Clean the fresh milkfish thoroughly.
- Squeeze lemon juice over the fish and sprinkle a little salt.
- Let the fish marinate for 5 minutes, then rinse it clean again.
- Steam the fish for 5 minutes to firm it up.

Prepare the Tomatoes:
- Wash the tomatoes. Steam them alongside the fish.
- Blend two of the tomatoes into a smooth puree.
- Slice the remaining two tomatoes into thin pieces.

Sauté Aromatics:
- Slice the onion, shallots, and chili peppers.
- Heat a pan and sauté the onion, shallots, and chili peppers until they are half-cooked and aromatic.

Create the Sauce:
- Pour the blended tomatoes into the sautéed mixture.
- Add the steamed fish to the pan.

Season and Cook:
- Add salt, palm sugar, and oyster sauce to the pan.
- Cook for approximately 3 minutes until the sauce reduces slightly.

Finishing Touches:
- Add the sliced tomatoes and sliced leek to the pan.
- Mix well and let it cook for another minute.

This dish is ready to be served immediately but tastes even better the next day as the flavors meld and deepen. Enjoy with steamed rice for a hearty and flavorful meal!
