Ingredients

Ingredient Quantity
Patin fish 350 grams
Large red chilies 3 pieces
Large green chilies 2 pieces
Tomato 1 piece
Sugar To taste
Salt To taste
Water Approximately 150 ml
Spice Paste
Small shallots 8 cloves (about 50 grams)
Garlic 2 cloves
Galangal (finger-sized) 1 piece
Lemongrass (white part only) 1 stalk
Candlenuts 2 pieces
Turmeric (3 cm piece) 1 piece
Large red chilies 2 pieces

Instructions

  1. Preparation of the Fish: Begin by cleaning the Patin fish thoroughly. Then, marinate it with a mixture of tamarind juice (or lime juice) and salt, allowing it to sit for at least 15 minutes. After marinating, cut the fish into cube-sized pieces.

  2. Chopping Vegetables: Slice the large red and green chilies, along with the tomato, into bite-sized pieces, ensuring they are ready to be added later.

  3. Making the Spice Paste: In a pan, sauté the prepared spice paste, which includes the shallots, garlic, galangal, lemongrass, candlenuts, and turmeric, until the mixture is fragrant and the raw aroma is gone, indicating that the spices are cooked through.

  4. Combining Ingredients: Add the sliced red and green chilies to the pan with the sautéed spices, stirring well to incorporate. Season the mixture with sugar and salt to taste, allowing the flavors to meld.

  5. Cooking the Fish: Gently place the marinated Patin pieces into the pan. Cook until the fish turns opaque and is cooked through.

  6. Adding Water and Tomato: Pour in approximately 150 ml of water and add the chopped tomato. Reduce the heat and let the mixture simmer, allowing the fish to absorb the flavors and the spices to infuse into the dish.

  7. Final Taste Check: Taste the sauce and adjust seasoning if necessary. Once the fish is thoroughly cooked and the flavors are balanced, remove the pan from heat.

  8. Serving: Transfer the Sasangan Patin to a serving dish, and enjoy it warm, accompanied by steamed rice or your choice of side dishes.

This dish not only reflects the culinary heritage of Barito Utara but also offers a unique taste experience that will surely impress anyone who tries it. Enjoy the rich, spicy flavors of Sasangan Patin as you dive into this delightful representation of Central Kalimantan cuisine.
