Sawi, Sausage, and Egg Stir-Fry
Ingredients:

Vegetables and Protein:
- 1 bunch green mustard greens (sawi hijau)
- 2 large eggs
- 2 sausages (sosis)
- 2 green chilies (cabai hijau)
- 200 mL water

Seasoning:
- 2 shallots (bawang merah)
- 1 garlic clove (bawang putih)
- 1/2 teaspoon salt
- 1/2 teaspoon chicken bouillon powder (Royco ayam)
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 tablespoon tomato sauce (saus tomat)
- 1/4 teaspoon ground black pepper (lada bubuk)
- 1 ripe tomato
- 1/4 teaspoon flavor enhancer (penyedap rasa)

Thickening:
- 1 tablespoon cornstarch (tepung maizena) mixed with a little water
Instructions:

Prepare the Greens:
- Rinse the green mustard greens thoroughly. Cut them into bite-sized pieces, then blanch in boiling water until tender. Drain and set aside.

Cook the Eggs:
- In a bowl, beat the eggs with a pinch of salt. Heat a pan with a little oil and pour in the eggs. Cook, stirring occasionally, to make a scrambled egg. Set aside.

Prepare the Sausage and Chilies:
- Slice the sausages into bite-sized pieces. Cut the green chilies into diagonal slices or according to your preference.

Blend the Aromatics:
- Blend the shallots, garlic, ripe tomato, salt, and black pepper into a smooth paste.

Sauté the Base:
- Heat some oil in a pan over medium heat. Add the blended paste and sauté until fragrant and the oil begins to separate from the mixture.

Add Sausages:
- Add the sliced sausages to the pan. Continue to sauté until they start to brown and are well-coated with the aromatic paste.

Create the Sauce:
- Pour in the water, followed by the sweet soy sauce and tomato sauce. Stir well and let it come to a boil. Taste and adjust seasoning if necessary.

Combine and Thicken:
- Once the mixture is boiling, add the blanched mustard greens and scrambled eggs. Stir gently to combine. Dissolve the cornstarch in a small amount of water and stir this mixture into the pan to thicken the sauce.

Finish Cooking:
- Allow the dish to simmer until the sauce has thickened to your liking. Once the sauce has reached the desired consistency, turn off the heat.

- Transfer the stir-fry to a serving dish. Enjoy hot with steamed rice or on its own.
