  1. Prepare the Greens:

    • Rinse the green mustard greens thoroughly. Cut them into bite-sized pieces, then blanch in boiling water until tender. Drain and set aside.
  2. Cook the Eggs:

    • In a bowl, beat the eggs with a pinch of salt. Heat a pan with a little oil and pour in the eggs. Cook, stirring occasionally, to make a scrambled egg. Set aside.
  3. Prepare the Sausage and Chilies:

    • Slice the sausages into bite-sized pieces. Cut the green chilies into diagonal slices or according to your preference.
  4. Blend the Aromatics:

    • Blend the shallots, garlic, ripe tomato, salt, and black pepper into a smooth paste.
  5. Sauté the Base:

    • Heat some oil in a pan over medium heat. Add the blended paste and sauté until fragrant and the oil begins to separate from the mixture.
  6. Add Sausages:

    • Add the sliced sausages to the pan. Continue to sauté until they start to brown and are well-coated with the aromatic paste.
  7. Create the Sauce:

    • Pour in the water, followed by the sweet soy sauce and tomato sauce. Stir well and let it come to a boil. Taste and adjust seasoning if necessary.
  8. Combine and Thicken:

    • Once the mixture is boiling, add the blanched mustard greens and scrambled eggs. Stir gently to combine. Dissolve the cornstarch in a small amount of water and stir this mixture into the pan to thicken the sauce.
  9. Finish Cooking:

    • Allow the dish to simmer until the sauce has thickened to your liking. Once the sauce has reached the desired consistency, turn off the heat.
  10. Serve:

    • Transfer the stir-fry to a serving dish. Enjoy hot with steamed rice or on its own.
