Marinated Chicken Drumettes with Savory Sauce

Ingredients:

  • 1 pack chicken drumettes (available at Carrefour or any grocery store)

For the Marinade:

  • 5 tablespoons oyster sauce
  • 4 tablespoons tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon dried oregano
  • 1 cm fresh ginger, grated
  • 2 shallots, finely minced
  • 1 garlic clove, finely minced
  • 1 teaspoon ground black pepper

Instructions:

  1. Prepare the Chicken:
    Begin by thoroughly washing the chicken drumettes. If you prefer, you can use other types of chicken as well. Once cleaned, set the chicken aside.

  2. Make the Marinade:
    In a large bowl, combine all the marinade ingredients: oyster sauce, tomato sauce, Worcestershire sauce, soy sauce, sesame oil, dried oregano, grated ginger, minced shallots, minced garlic, and ground black pepper. Stir the mixture until all the ingredients are well blended.

  3. Marinate the Chicken:
    Add the cleaned chicken drumettes to the bowl with the marinade. Toss the chicken to ensure that each piece is well coated with the marinade. Cover the bowl and refrigerate for at least 3 hours. For the best flavor, allow the chicken to marinate overnight, up to 10 hours, as this will enhance the depth of flavor and tenderness.

  4. Cook the Chicken:
    After marinating, transfer the chicken and marinade to a saucepan. Add approximately 200 ml of water to the pan. Cook over medium heat, stirring occasionally, until the liquid reduces and the sauce thickens. Continue cooking until the sauce has reduced to a glaze and the chicken is cooked through.

  5. Fry the Chicken:
    Heat a generous amount of oil in a large frying pan over medium heat. Ensure there is enough oil for the chicken to be fully submerged while frying. Once the oil is hot, add the chicken drumettes (discarding the marinade) and fry them, turning occasionally, until they are golden brown and crispy, about 5 minutes.

  6. Serve:
    Remove the fried chicken drumettes from the pan and drain them on paper towels. Transfer the chicken to a serving plate. Pour the remaining thickened marinade from the saucepan into a small bowl and serve it alongside the chicken for dipping.
