Ingredients:

Quantity Ingredient
6 tbsp Olive oil
1 Onion
5 cloves Garlic cloves
2 tsp Chili powder
5 tsp Cumin
3 tsp Ground coriander
1 1/2 tsp Ground cinnamon
1 Boneless chicken breasts
1 can Diced tomatoes with juice
6 oz Beer
To taste Salt
1 cup Grated cheddar cheese
1 Scallion

Instructions:

  1. Heat half of the olive oil in a soup pot over high heat.
  2. Add chopped onion and minced garlic cloves, then sauté over medium heat for about 5 minutes until softened and fragrant.
  3. Incorporate diced peppers into the pot and continue to sauté for an additional 10 minutes until they are tender.
  4. Stir in chili powder, cumin, ground coriander, and ground cinnamon; cook for 5 minutes to release their flavors, creating a fragrant base for the chili.
  5. Remove the pot from the heat and set aside while you prepare the chicken.
  6. In a separate skillet, heat the remaining olive oil over medium-high heat.
  7. Brown the boneless chicken breasts in batches until they are golden brown on all sides, ensuring they are cooked through.
  8. Add the browned chicken, diced tomatoes with their juice, pitted olives, and beer to the soup pot, stirring to combine all the ingredients.
  9. Simmer the chili over medium-low heat for about 15 minutes, allowing the flavors to meld together and the chicken to become tender.
  10. Stir in the chocolate, which adds a rich depth of flavor to the chili.
  11. Season the chili to taste with salt, adjusting as needed to enhance the flavors.
  12. Serve the chicken chili hot, garnished with grated cheddar cheese and thinly sliced scallions for a pop of color and freshness.

Tips:

  • Beer Choice: Choose a beer with a flavor profile that complements the spices in the chili, such as a lager or amber ale.
  • Chocolate Addition: Don’t skip the chocolate! It adds a subtle richness and depth to the chili without making it taste sweet.
  • Make-Ahead: This chili tastes even better the next day, so feel free to make it in advance and reheat it when ready to serve.
  • Customization: Feel free to customize the chili to your taste by adjusting the spice levels or adding your favorite toppings such as sour cream, avocado, or jalapeños.

Enjoy your hearty and flavorful Chicken Chili! 🌶️🍗
