Instructions

  1. Prepare the Spices: Start by grinding the garlic, shallots, black pepper, and red chili into a fine paste, leaving the lemongrass and bay leaves aside.

  2. Sauté the Mixture: In a pan, heat a little oil and sauté the spice mixture until fragrant. Add the bruised lemongrass and torn bay leaves, cooking for an additional minute to release their aroma. Lower the heat.

  3. Combine Ingredients: In a mixing bowl, crumble the tofu and add it to the sautéed spices. Stir briefly, then incorporate the shredded mushrooms. Mix thoroughly, and season to taste.

  4. Incorporate Eggs: Once the mixture is well combined and flavorful, add the beaten eggs. Mix until fully integrated.

  5. Wrap the Mixture: Prepare the banana leaves by briefly heating them to make them pliable. Place 2-3 tablespoons of the mixture onto a leaf, top with a few slices of tomato, and fold the leaf securely to create a parcel.

  6. Steam the Pepes: Arrange the wrapped pepes in a steamer and steam for approximately 30 minutes or until cooked through.

  7. Optional Grilling: For added flavor, lightly grill the steamed pepes in a non-stick pan with a bit of oil until they develop a crispy texture.

  8. Serve: Once cooked, remove the pepes from the heat and serve them hot as a delicious main or side dish.

Enjoy this unique blend of flavors and textures in Pepes Tahu Jamur Merang, perfect for any gathering or family meal!
