Medan anchovies (teri medan) 50 grams (or use teri nasi)
Granulated sugar 1 teaspoon
Ground pepper (merica bubuk) To taste
Flavor enhancer (penyedap rasa) 1/2 packet or 1/2 teaspoon
Salt 1/4 teaspoon (adjust to taste)
Bay leaves (daun salam) A few leaves
Banana leaves (daun pisang) Enough for wrapping

Instructions

  1. Preparation: Begin by thinly slicing the shallots, garlic, red chilies, and large tomato. Chop the green onions coarsely and set aside.

  2. Tofu Mixture: In a mixing bowl, mash the yellow tofu using a spoon. Add the flavor enhancer, sugar, ground pepper, and salt (keeping in mind that the anchovies will add saltiness). Mix well until combined.

  3. Combine Ingredients: Add the sliced shallots, chilies, tomato, and anchovies into the tofu mixture. Stir everything together until evenly distributed.

  4. Wrap in Banana Leaves: Take a portion of the tofu mixture and place it in a piece of banana leaf, folding it securely. Insert a bay leaf into each wrap for added aroma.

  5. Steaming: Place the wrapped packages in a steamer and cook for about 20 minutes, or until the steam has reduced.
